The Pastry Cook position is an important part of the Funkatorium/Cultura team. Essential Duties and Responsibilities: In addition to the responsibilities of a regular line cook, the lead line cook has the following: Maintains a positive attitude in the presence of other line cooks Encourages team to push through busy services Actively monitor morale in kitchen Help maintain safe sanitary work environment Monitor cooks’ cleanliness during service Oversee line breakdown Prioritize daily/weekly cleaning tasks Plays active role in training new line cooks Communicates SOPs and best practices Encourages and answers questions Offers constructive coaching Plays an active role in quality assurance Ensures stocked line items are in date, stored and prepped properly Taste tests prepped items for consistency Monitors complete ticket items to ensure only high quality products reach our guests Assists with special prep, R&D Communicates recipes and updates to line Suggests seasonal dishes to maximize inventory turnover Notes process improvements and best practices in execution of line procedures/pickups Observe and report potential misconduct Levee no disciplinary action but do offer constructive coaching when observing employees failing to follow correct procedures Note potential misconduct with MOD/KM/AKM Responsible for Pastry production and execution for Cultura Menu Additional duties may be assigned as necessary. Work Environment: Rapid changing flow of business That of a busy brewpub dining area and full service kitchen. Late nights/Early mornings Fast-paced The employee frequently must work in an environment with a moderate to high noise level. Hot or humid conditions Cold conditions in the walk-in Steam, kitchen equipment, and chemicals Physical Demands: Ability to be on your feet for long periods of time standing and/or walking. Walking surfaces may be wet and/or slippery. Ability to frequently sit, stoop, kneel, crouch. Ability to frequently talk, hear, and smell. Ability to lift and/or move up to 55 lbs. safely and with proper body mechanics and occasionally life and/or move up to 100 lbs. Ability to frequently reach with hands and arms; use hands to finger, handle or feel objects, tools, or controls. Vision abilities required by this job include close vision, distance vision and the ability to adjust focus. Ability to work effectively in a kitchen environment with fluctuations in temperature and conditions (heat, cold, humidity) for an extended period of time.
