Pastry Chef Trainer
The Pastry Chef Trainer is a shipboard management position with travel to all American Cruise Lines (ACL) ships. This role is responsible for assisting with developing standard menus, recipes, and procedures. The Pastry Chef Trainer will assist the Corporate Executive Chef to ensure shipboard Pastry Chefs are adhering to approved standards and providing guests with high quality food. Providing the guests with a consistent culinary experience is a primary duty. This role will oversee pre-deployment and recurrent training for the culinary department.
The Pastry Chef Trainer will oversee and conduct internal food safety audits to ensure strict food safety and sanitation policies are followed as required by the Food and Drug Administration and other regulatory groups.
Job Duties:
- Oversees and delivers recurrent ACL standardized Pastry Chef training fleet wide.
- Supports the Regional Corporate Executive Chef’s as well as shipboard Executive Chef’s in training the shipboard pastry teams.
- Assists with recruiting and interviewing potential Pastry Chefs as well as developing existing on board Pastry Chef’s or cooks.
- Assist in writing standardized recipes and cost analysis.
- Taste all products produced to assess quality.
- Audits chefs to ensure menus and recipes are followed.
- Ensures consistent culinary product is delivered to guests and crew.
- Oversees prepared food program.
- Coordinates and assists with food purchasing strategy, logistics, and oversight of food vendors.
- Ensures compliance with regulations set forth by Food and Drug Administration, US Public Health, US Coast Guard, and other regulatory organizations.
- Reads comment cards, identifies areas for improvement, and makes recommendations for improvement.
Qualifications:
- Associate’s Degree in Culinary Arts, Pastry & Baking preferred
- Minimum 5 years’ of Pastry Chef management experience preferably cruise ship experience and or full-service hotel, resort or country club
- Willingness to travel: this is a traveling position, and a majority of the time is spent onboard the ships during the season
- Pastry instructor experience recommended
- Purchasing experience
- Ability to work in a TEAM atmosphere
- Ability to multi task while working calmly and effectively under pressure
- Strong organizational skills and excellent verbal and written communication skills (English)
- Proficiency in Microsoft Office including Excel and Power Point
- US Coast Guard regulated pre-employment drug test
Work Schedule:
- Ability to work 8 or more weeks on with 1 to 2 weeks off
- Occasional vacation relief for shipboard Pastry Chef’s
